I love this recipe!
• 1 cup cooked quinoa
• 1 cup cherry tomatoes (halved)
• 1/2 cucumber (diced)
• 1/2 red bell pepper (diced)
• 1/4 cup chopped parsley
• 1 tbsp olive oil
• Juice of 1 lemon
• Salt & pepper to taste
Instructions:
- Cook quinoa as per the packet instructions. Let it cool.
- Chop all veggies and combine in a bowl.
- Add quinoa, lemon juice, olive oil, salt and pepper.
- Mix well and serve chilled.
