Colorful Quinoa Salad – A Healthy, Tasty Bowl in 15 Minutes

Ingredients:

     •   1 cup cooked quinoa
     •   1 cup cherry tomatoes (halved)
     •   1/2 cucumber (diced)
     •   1/2 red bell pepper (diced)
     •   1/4 cup chopped parsley
     •   1 tbsp olive oil
     •   Juice of 1 lemon
     •   Salt & pepper to taste


Instructions:
  1. Cook quinoa as per the packet instructions. Let it cool.
  2. Chop all veggies and combine in a bowl.
  3. Add quinoa, lemon juice, olive oil, salt and pepper.
  4. Mix well and serve chilled.
